Brown Bag Series : simple beef pad thai, avocado & apples


We had some leftover rice stick noodles & sliced beef, so I turned them into a simple pad thai. This entire box is gluten free.

simple pad thai – not gonna lie, it’s a pretty loose interpretation, but this is basically what I did – 1 TBLS coconut oil + 2 sliced thai peppers + 2 cloves of sliced garlic, all into a hot wok.  Then I added in 8 oz. of already soaked/soften rice stick noodles + 1 TBLS soy sauce + 2 tsp sugar + 1 1/2 TBLS fish sauce. Stir that all around until noodles get soft, added in a little more coconut oil so noodles don’t stick too much, then added in the sliced beef and turned off the heat once the meat was cooked.  I cooked a simple egg pancake, sliced that up, then also added in some green onion, chopped peanuts, and lime.

The other parts of the box contain : sliced organic avocado dressed with salt, pepper, lime & then a sliced organic apple.
