I’ve been in love with rolled oats for a long time, and NOT because they have been deemed “heart healthy” by the Quaker Oats guy!  I love rolled oats in cookies, pancakes, muffins, BAKED oatmeal…just not a big fan of regular mushy oatmeal!  Because it’s good for you I sometimes think oats gets a bad rap…as in “oh, how good could that possible taste, it’s HEALTHY after all.”  Well, I may be a bit biased, but I think these muffins are great.  They are light & fluffy, not overly sweet, have a slightly nutty texture from the oats, and a burst of flavor from the blueberries!  Even though you can tell it’s GOOD for you, it also TASTES yummy, so that’s a win-win in my book!

These Oatmeal Blueberry Muffins come together pretty quickly and develop a nice crust on the sides, even after cooled and re-heated.  Feel free to adapt these as needed, I did a gluten free version with only 2/3 cups of blueberries and they turned out perfect!!
